Most honey is made by bees. But sourwood is made by bees and angels.
Sourwood honey is so rare that a good crop sometimes only surfaces once every decade. Yet, its deep, spicy flavor makes it sought after by honey connoisseurs everywhere. The honey’s scarcity can be attributed to the very small amount of sourwood trees currently growing. The medium-height tree is indigenous to the United States and grows from northern Georgia to southern Pennsylvania. It is also known as sorrel and lily-of-the-valley. It typically blooms from June to August, providing a small window of time in which beekeepers can bring their colonies to collect nectar from the flowers.
The bloom period is quite short and beekeepers must time themselves accordingly in order to ensure that the bees do not harvest any nectar from other flowering plants. If the bees are brought to the area too soon, they will harvest from the sumac trees that bloom before the sourwood and if they are brought too late, they will miss the beginning of the flow of nectar.

Honey Commonly Used in Recipes....
During the "old days" recipes called for honey to add sweetness. In fact, honey was once the only method of sweetening until sugar cane was introduced and so old recipes do feature it strongly. Indeed during war time, with sugar on ration, bee keepers came into their own and honey was once again used as a sweetener. Gail Anderson-Dargatz in her strikingly evocative novel on Canadian farming, “A recipe for bees” says “During the war honey had replaced sugar for canning, sweetening tea and coffee, and making cakes and cookies. Now that the war and rationing was ended, the market for honey had bottomed out. Augusta herself had dumped her honey-canned fruit once sugar was available. Everyone was hungry for sugar then, and sick and tired of honey.”

The Wonderful Effects of Beeswax !!
An artilce on Lance Armstrong's Live Strong web site. Lance knows the benefits of beeswax but many don't. This article provides some of the basic, miraculous results and uses of beeswax.
Why Choose Beeswax for Your Skin?
Many creams and lotions for hands, feet and face contain beeswax. These moisturizers contain other oils, such as mineral or olive, and the result is an emollient that does an excellent job of soothing and softening the skin. It also protects the skin because it's water resistant. However, it's a myth that beeswax causes or worsens acne and pimples. Beeswax is so safe and mild that baby products contain the ingredient. Lanolin and paraffin are cheaper than beeswax, but they are reportedly not as beneficial to the skin as beeswax. Read more: http://www.livestrong.com/article/6341-need-beeswax/

The Curative Effects of Honey is DEPENDENT on the Qualiity of the Honey
In addition to being a natural sweetener, there has been a lot of scientific research that supports honey’s use as an antioxidant and an antimicrobial medium.
The level of healthy benefits of honey depends greatly on its quality, how it is produced by the bees as well as the process the honey undergoes to prepare for human consumption. Raw honey is chockfull of phytonutrients, thanks to the pollen collected by bees through many different plants. These phytonutrients contains a number of components that have shown promise in preventing colon cancer, tumor growth and cleansing wounds. Why honeybees are falling through the cracks ...
The plight of the honeybee continues. It would be a very scary world without the honeybee.
ver the past three years, more than 50 billion honeybees have died. Scientists understand the causes, and now we need everyone to lend a helping hand.
The humble honeybee has been inextricably linked to humankind since prehistoric times. We were first drawn to this remarkable creature because of its sweet honey, which is to a bee what electricity is for humans – energy. One teaspoon of honey, about 21 grams, contains 16 grams of sugar, or 60 calories. It takes 12 bees their entire foraging lives, combined flying time of about 9,700 kilometres, to produce this much.
To understand the importance of these bees, consider that every third bite on your plate is a result of their primary role on the planet as pollinators – the most important group on Earth.
