After significant disruption following the disastrous tsunami in December 2004 and the earthquakes of 2007, income from specialty coffee is playing a key role in providing capital for rebuilding destroyed infrastructure, communities and lives. The dual certification of this coffee means that it was grown and processed in a way that is good for the environment (organic) and sold at a price that is good for the people growing it (Fair Trade).
Gayo Mountain is a semi-dry processed coffee, which means that the skin of the coffee cherry is removed shortly after picking and the mucilage (sticky fruit) stays on the seed and is allowed to dry. Later it is removed by mechanical means, and is then hand sorted. In wet processing, the skin and mucilage are both removed and only the coffee seed (still in its parchment skin) is dried. By keeping the fruit in contact with the seed during drying, natural flavors are imparted to that seed. This is what helps give Sumatran coffees that fermented, fruity, earthy, smoky, leathery flavor we enjoy so much. A lot of Sumatran coffees can have a moldy, musty, dirty flavor (sounds strange, but some people love it!), but this Gayo Mountain dodges all that, while retaining the ripe fruit and earthiness of distinctive Sumatran coffee. It has exceptional body and low acidity.
