The truth about estate coffees is that they represent less than one percent of the world's total coffee harvest. This small percentage of harvest is due to the fact that there are only a few capable of producing these specialty coffees throughout the vast region where coffee is grown and harvested. These areas have a combination of elevation, soil, sunlight, rainfall and climate that play a very important role in the overall intrinsic flavor of coffee. In addition, the delicate method by which the coffee is harvested and processed is critical to the end result.

A daily ritual for many, Americans brew about 400 million cups of coffee every day. However, the most common problems facing good coffee preparation are "old" coffee and coffee that is pre-ground. When coffee is roasted, there are oils that are retained in the beans. Those oils provide maximum flavor, but you have to use the beans within two weeks.
